km/hr, m/s, which units like that are best to use

You mentioned the most common and standard used velocity units, that being km/hr ( mostly used for driving) and m/s commonly used in physics. However, for a cashier conveyor i would suggest using units such as meters per minute. I think it's mainly a judgment call, you cant go wrong with the standard units, but if you want you can always go with minutes too. After all, you can always convert between the units quite easily.

meter per second. Considering the situation in the supermarket, I think m/s is still good enough to measure the velocity.
