The easiest way to cut sheet steel is by using a bench shear. It is sort of a lever action "guillotine". 1/8" thick steel is pretty thick and would take you a long time to cut with a saw, but its not impossible. If it were 1/8" sheet silver we were talking about, a #1 blade in a jewelers saw frame would probably work. I don't know how well that would work on steel. Although, it works well on brass and copper. Other than that, try a hack saw. The hardest part will be keeping a straight line.

Try a stainless steel hole-saw, around 7/8" to an 1 7/8''.
Then use a hydraulic stainless steel punch. Makes a nice
clean hole. I am an electrician from NYC, and I work on a
bridge. We punch stainless from around 1/16'' to @ 1/8".
Try going to a metal shop or even an auto-body shop.
A business that installs stainless steel appliances may steer
you in the right direction.

A good quality hole saw will do it, run at slow speeds with a generous amount of cutting oil.

Punch it with a chassis punch, hole saw, or Oxy Acetalyene cutter tip.

i cant see why a cutting torch would not do the job, but anyway take the piece to a salvage yard & they should cut it for you at a small charge
