I mean like when you see gameplay footage and it is straight from the screen. How can you set your TV up to record that?

either run the video game system through your VCR or DVD recorder (i.e. in through the "antenna in" and out to the tv through the "antenna out" for VCRs)

or run a line out from your tv to the VCR or DVD recorder. however, this second option will record things like volume control or picture adjustment stuff. basically, it records everything that happens on your tv screen.

The quickest & easiest option is to connect your video game system to your VCR / DVD-Recorder (whatever you have or prefer). Next, just set your TV to your VCR/DVD-Recorder & then set your VCR/DVD-Recorder to Line (or the appropriate line, if you have 2 A/V ports) channel.

Just start up your system & then hit record when you're ready.

It's just that simple!

Have you tried just using a hand held cam-corder?
