Not at all. The highway is well-maintained its entire length through the state. The portion from the Wyoming border to Salt Lake City crosses two mountain passes and is difficult during very bad weather, but is easy the rest of the time. There is a little construction south of Coalville right now, but it isn't major.

Going west, get gas in Evanston, Wyoming if you need it. There are stations between there and Salt Lake City, but it's easier to gas up in Evanston. Get gas in Salt Lake City if you didn't need it in Evanston because there isn't much between there and the Nevada border two hours to the west--most of it is across the Salt Flats and there is NOTHING available for about a 90 mile stretch.

Going east, get gas in Wendover, then see above note in reverse.

And, actually, getting off the interstate in Salt Lake City if all you need is gas is not exactly easy. It's better to get gas in either Wendover or Evanston (or Coalville or Park City), than it is in Salt Lake City.

EDIT FOR GRANOLA: Eh, I'm sorry to see a Canuck living down to the parody of Rick Moranis, eh.

No, but it is a tough state to live in...everyone pretends to be so righteous, and proper and at the same time they are all busy watching porn in their basements. Utah was the number one consumer of porn in the U.S. in 2006...I wonder why?

I've done it and I had no issues. Also, the scenery in the eastern part is amazing.
