I have the best fruit salad recipe and you can make it as large or small as you want:
chop up apples
add red seedless grapes
can (s) of pineapple chunks (reserve juice)
can (s) mandarin oranges (discard juice)
sliced strawberries.
Put in enough fruit to fill whatever size bowl you want.
In separate bowl add 2 8 oz packages of softened cream cheese (soften in microwave for a few seconds). (If you do a smaller salad, add 1 pack of cream cheese)
beat with mixer and add a little of the reserved juice.
Stir this cream cheese mixture into the fruit and you are done!!!
You can throw in some walnuts too if you want.

Wow, I saw some interesting ideas here. I don't know how formal or casual this buffet is...I have made some interesting cole slaw recipes that people love, and you can make it colorful and festive by shredding in some purple cabbage and maybe adding something a little different like golden raisins. But that is for a very casual buffet. Otherwise, I agree with the pasta salad people. I prefer rotelli (corkscrew) for pasta salad. Add some broccoli and cauliflower cooked al dente, fresh red and golden pepper, chickpeas, ripe black olives, julienne carrots, mixed up with a lovely simple vinaigrette, and crumble some feta or bleu cheese on top. Not too expensive, but very delicious and festive!

I would go & buy about 8 boxes of pasta salad mix (thay are sometimes on sale for $1 or so. They are super easy to make, and very inexpensive, not to mention really good! All you have to do is add oil and water usually, and let sit in the fridge for a little while, Good luck!

Pea-Nutty Salad..... Defrost (not cook) 7 bags of frozen peas. Dice up 2 or 3 good size purple onions and add to the peas. Add a 19 ounce jar of dry roasted peanuts, a cup of pickle juice, 3 cups of mayonaisse, and 3 heaping tablespoons of sugar. Toss well and chill. Will serve about 45 people and it's so yummy! :)

Heres my favorite................
Buy frozen packages of Peas...... Thaw. In a towel so moisture is absorbed..... DO NOT COOK !
Thin slice celery.......... Chopped Green Onions............ Sprinkle liberal amount of "Cavender"s All Purpose Greek Seasoning"......
Mix together............ Re frigate......
Sauce Topping:
Mix "GOOD SEASONINGS ORIGINAL RANCH DRESSING - BUTTERMILK RECIPE...
After mixing dressing together, I like to add a fair amount of Garlic and Parmesan Cheese ... It adds a nice little punch of flavoring...... Do not put dressing over the salad till ready too serve... Serve Salad in large low baking type casserole dish... About half the time I will let the guest put their own dressing on....
The Greek Seasoning is really the main crux of this recipe, so please do not substitute anything else for it....
Also: One does not have to use the Ranch Dressing as the Greek seasoning is already there...

chicken oriental salad is mmm good...
u need for 49 people
6 cups of cooked diced chicken breast
8 bags of chicken ramen noodles, crushed with the packets set aside
3 bunches of green onions, chopped
4 cups of sunflower seeds
3 cups of slice almonds
4 bags of coleslaw
3 cups of apple cider vinegar
2 1/2 cups of olive oil
4 cups of sugar
mix the vinegar with the olive oil, sugar, and seasoning packets...shake well to incorporate
then mix all other ingredients together, add liquid and stir... let sit for 2- 3 hours before serving stirring once and a while

Relax i know just what to do. go to smart and final and in the refrigerated section (close to the cheese) you'll see these huge tubs of potato salad and macaroni salad. its guaranteed to please everyone and feed a crowd. oh and to top it all off it won't cost more than $10.
