We heard that you had to be there by 6:00am to see all the action.

Between 5 and 6 AM is OK. Before those times, the place is open for business to business reasons, tourists are asked to not come. There is still lots to see at 0600. I brought my father there at 0700 and there was plenty to see and experience.

Fishermen usually come back at 3am, so yeah, near 3:30 to 5:00, I guess

You are right, if you just want to "see all the action". But if you want to actually buy fish, between 4am-5am would serve you better.

You have to get there before the oceans are entirely depleted of edible fish.
