The mouth is actually the first stop in the digestive process. Your teeth grind the food into bits that are easily swallowed while the enzymes produced in your saliva help to break down the food even further. Your tongue is used mostly for taste (and forming sounds while speaking).

Activating the taste buds is one cause for the saliva to be generated. Also, pre-mashes the food and sets up for teeth to do their job
