I like Hotmail's filters. You can use the 'exclusive' filter so that anything from someone not on your email list gets sent to 'junk'
You can also mark things as spam, and anything sent to your junk folder you can mark "not junk" so it won't be sent there anymore

Spammers Spammers Spammers. Urgh. I deal with them everyday. I am a technician for a very popular spam filter.
The advice I give to my customers is:
1. Make sure you are not using your personal email address to subscribe for anything online. Make a separate account for that.
2. If you can find a software (some are free) where you can have it scan your mail for key words, add those into your filtering.
3. Don't open any mail you don't know who it is from.
4. go to blacklists such as www.spamhaus.com and add these people into their data base (you can get the IP address which is best from the headers of the email)
Unfortunately Spam keeps evolving and its going to get harder and harder. But luckily there are alot of companies like the one I work for that are coming up with new technique.

Everyday spammers find new routes to try to get into your email inbox. Spam consists of unwanted advertising, but some can transmit viruses, ad ware or spy ware on to your computer and cause problems. A lot of time is wasted sorting through the email received and deleting Spam email While it is not possible to totally eliminate Spam email, you can keep junk emails manageable. I have seen a brief study on spam in the following site. It is very useful .I recommend that you adopt the methods suggested there and get benifitted.

Open your email page. In the upper right hand area of the screen you will see "OPTIONS" Click on that.
You will see a choice: "SPAM PROTECTION" Click on that
In the first set of choices: "SPAM FILTER"
O - Immediately delete these messages......
O - Save these messages in bulk......
Make sure first box is checked and second box is unchecked.
In the second set of choices: "MARK SPAM + NOT SPAM"
O - Add sender's email address to my blocked addresses....
Make sure this box is checked.
Then after that when you go to check your email (IN BOX) Check the box of all of these unwanted emails. Then click on
"MARK AS SPAM"
You'll still receive emails from all of this spammers email address. He may have a 100 different ones. But each time you mark one as spam... it will block any mail coming from that address and it will also report it to yahoo. After a week a so, the spammer will have exhausted all his email addresses and won't be able to bother anymore.
It happened to me and drove me crazy. But this does work. Give it a try!
Good Luck

One way or another, you have to turn on any anti-spam software you have. Mark it as spam and have it sent to a spam folder or auto delete.
What I've done is turn on the antispam on my web based email. The spam is sorted out there, and then use my pop 3 client Thunderbird to collect the mail. This way I never see the spam if I don't want to.
You have to go to the web based mail and check the spam from time to time to be sure it's not a friend being sorted as spam. Also pop 3 has to be turned on in the web based mail preferences.

Get spam filtering software and see if it helps. If you've already got spam filtering software, you're just going to have to grin and bear it until your software gets a little "smarter." It's an ongoing "arms race" between the spammers and the filter developers, and at the moment the spammers are ahead.

Change your email settings to "show all headers" when receiving mail. Then forward the offending mail to spam@uce.gov (Federal Trade Commision) Finally, mark the email as spam and the address will be blocked.
