Here is a link to a geology field trip report which includes photos and description of a red shale formation in New Jersey with that name. There is also one in Kanawha County, West Virginia (which I have seen -- Google "devil's tea table" and you will find photos of it, too.) Basically, these formations are caused by the erosion of layered rock by water flowing around a sedimentary formation which has an upper layer that is more resistant to erosion than lower layers. As the water wears away the lower layers, more of the upper layer remains, creating the "table" effect. Such formations can also be caused by wind erosion (search for photos of areas like Canyonlands and Arches National Parks in Utah.) There are often local myths and legends that people have invented about such formations.

Hope this helps a little.
