i.e. their cuisine etc. How do they get the star grades? And how can I get that job?

Have you tried Googling "Mystery Shoppers" or "Secret Shoppers?" I understand that those who are hired get to rate a variety of restaurants.

"Star Grades" are mostly if not exclusively given by daily newspapers or dining guides such as Michelin or Zagat. Ratings can be given by any time of food reviewer such as an online blog, online magazine, in-print magazine, newspaper, weekly newspaper, travel newsletter or even a podcast.

Having worked in publishing and for a major food magazine, I know this from first hand experience. A restaurant critic's job is very sought after and in most cases, is a job held by a senior or very experienced writer or editor at a newspaper or magazine.

To get into the field it is a good idea to go to college and major in journalism, English or communications. Internships at local papers or publishing related companies are good experience, as well as writing for a local or school newspaper. The majority of the time, a food critic has both extensive journalism experience as well as an interest or secondary schooling or extensive education in the culinary world such as culinary school, work experience in a restaurant or other education such as wine or hospitality.

Many, many times, a food or restaurant critic has had lots of experience writing on a variety of topics and is a very strong writer. A newspaper or magazine also looks a leadership/management ability as well as a unique voice in the person that will bring a unique and individual tone to their reviews for the magazine or newspaper.

stars come from news papers, mags, published restaurant guides food associations such as AAA or the New York Times....Each one has a different criteria. You could always look into becoming a secret shopper and specialize in food. Or work for a company like Barmetrics...
