Univ of Phoenix and any of those online or nontraditional "universities" are for people who are going back to school or just doing it part time. The value is for those who simply need a degree from anywhere. If they have one, that's good enough for whoever is asking.

Being an astronaut is a very competitive deal. Prestige does matter. Just like Bear Stearns, JP Morgan, etc isn't going to take someone with an MBA from U of Phoenix, NASA isn't going to pick a person with a BS from U of Phoenix (likely need more than just a BS to be an astronaut, but that's besides the point).

The short answer is probably not. It is true that nearly all the astronauts have degrees from very well known universities but that shouldn't stop you from trying.
There are basically 2 types of astronauts, pilots and mission specialists. Pilots are almost always taken from military service and even those are frequently graduates of military academies (usually Air Force or Navy). Mission specialists almost always have a PhD in a hard science or engineering which I think is not likely to be offered at the University of Phoenix. Additionally, there are physical and mental requirements that must be met. In short, it's very difficult and competitive to be an astronaut. If you want to take that route, be prepared spend a lot of time in school and keeping yourself healthy. Don't let this be a discouragement to you. Do your best and life will reward you in kind.

I doubt that NASA would take it seriously.

You might want to read the NY Times article below before getting an on-line degree. The University of Phoenix has local accreditation -- but is not accredited nationally. Many employers -- like Intel are refusing to pay for students to attend U of P because they feel that it does not meet their standards. The U of P is a For Profit Corporation and recently was fined $9.8MM for sleazy recruiting practices.

Go to a real school.

Look at the Bios of astronauts. You will find that they have degrees from places like MIT and the Service Academies.

In the science degrees, it's expected that you do lab work. How can you do that on an online university? All science degrees at regular universities require you to take labs.

you would be in opposition for jobs at McDonalds and at call centers. and you will possibly have vast college charges - Plus a level this is basically a valueless piece of paper. do no longer do it - a 2 year employer application on the community community college is a lot saner.
