I have paid my lawyer both my contigincey fee's and made the appropriate monthly payments per our written agreements. Now that my last court date approaches, in two months, and i have seven months of payments to make, he is demanding that I pay my balance in full this month! Is this legal/ethical and is there anything I can do?

make a complaint to the state bar. That is the cheapest way to combat it. Otherwise you can sue him for breach of contract. Surely he signed it as well. Make sure nothing in the contract says he can to that.

Ditto about contacting the state bar. Make sure that you have a copy of your contract for legal services showing that your balance does NOT need to be paid in full before he represents you in court.

Legally he can't make you pay, but he can get enough delays so that your court date will be after he has been paid in full

not unless its in your contract. He cant change the terms
