Do candy grams--take a peice of shamrock candy, and let students buy them for their friends for say, $1 each, then they get a public gift of a candy and a note from their friends while in school. Sell them during lunch, then hand them out during homeroom on St. Patty's day or something. You can do that for any holiday, etc. It's basically a peice of paper (can be green or whatever) with a one sentence note from a friend and a peice of candy stuck to it.
My school used to do them for plays, and your parents/friends/etc. can buy one for you before the show, and during the intermission, they took them backstage and gave them to the cast. You can do them for anything.

I currently have a fundraiser for schools. The schools would sell the Summer Bridge workbook series. They are for children entering PreK through 8th grade. They are educational workbooks that the students would complete over the summer. You would earn $1 per book sold. (There are no other charges)

Sell tickets for a draw, get a pot, fill it with gold nuggets, have one nugget in the pot numbered (under the gold wrapping) and do a draw, and give the winner 25.00 or whatever you determine to whomever draws that nugget.
Do a dress up day, and have the students pay to be able to dress a particular way for that day only.
You could also have your club bake some goodies, and sell them to the school personnel / staff.

silent auctions are really involved, but make the most money. this would only work if you were involving parents, etc.
if its more casual, try a pancake breakfast. you can hire a pancake man (google it for your area) and ask them if they'll spike the batter with green food coloring. You could raffle prizes (call your raffle "luck of the draw") or something festive.
who doesn't like pancakes???

get the students to play the same game my high school played last year - sell shamroc shaped paper necklaces to the guys, how the game is played is the guys cant talk to girls otherwise the girl they talked to gets their necklace. if the girls get five shamrocs, they get a prize, if the guys keep their shamroc, they get a prize. hope my idea works. happy valentine's day!!
