Well, the man was unstoppable. HE used Light Cavalry only consisting of horse archers and lancers. In Europe, cavalry were defeated by heavy infantry. But why could no one defeat the Khan? Why couldn't anyone adapt to his Tactics? Can you suggest some ways by which he could've been defeated?

The Jin Dynasty could have defeated Kahn, but they hestitated in attacking. They instead sent a "scout" who ended up turning against them and told Kahn where Jin's army was. In this case, attacking first may have ensured the Jon Dynasty a victory.

Other ways:
Infiltrate the Mongol military with spies; go on the offensive; ally oneself. The Chinese rulers could have easily allied themselves and fight Kahn together, but they were too busy fighting amongst themselves.

One of the main problems were the European divisions. Had the kingdoms of Europe acted in concert they could have posed a more serious threat.

Beings that Kahn's army was so lightly armed and armored, it would seem to me that they would have been exceedingly vulnerable to missiles and the size of the Mongol army would only have served as a larger target to Europeans. Unfortunately, I have heard from at least one source that archers were not a widely employed or respected class. Whether this is true of the European powers at the time of Genghis Kahn I cannot say.

Another measure which may or may not have helped defeat the Mongol cavalry would be to do what King Henry V did at Agincourt and plant large spikes in the ground, creating a hopeless defile for charging cavalry.

Certainly fighting in wooded areas would have presented an advantage to the Europeans. Perhaps they simply weren't picking their battles properly.
