Yes you can get Humane, or Live traps that will not injure the target species, they are baited and usually operate a spring door, but a word of caution.
Rats can have a condition called Neophobia, which is a fear of new objects, so it can take time to catch them, this is the same for any trap or bait, secondly, they can become "Trap shy" which means they will avoid suspicious objects, or a trap they have seen other rats caught in.
You also need to be aware that you will need to remove the caught rat from the trap, they can be very aggressive, and when you let them go you have to take them at least two miles away, or they may return, and then you may be giving someone else your problem.
Bear in mind that most wild rats will carry some disease or other, not necessarily the oft mentioned Wiels Disease, but they do carry a variety of others, they need careful handling if you still decide to take this option.
Good Luck.
PS Having seen some of the previous answers I would mention that all pest species are required to be dipatched humanely,(UK) and glue traps are a major bone of contention, in my opinion, for what it may be worth, they should be banned from sale, the snap traps are fast and effective, and if correctly placed do not always require baiting.

I wouldnt use poison either and the only reason is that it would crawl somewhere and die where I can't get to it. I prefer the rat trap that swings down and breaks its neck and severs its spinal cord. You don't need to worry because its all over in an instant. Rats carry many diseases and their 'waste' contaminates everything around it which will make you very sick not to mention the smell. You always know you have mice just by the smell. You could also try a live cage trap and then kill it after you catch it. I could give you all sorts of ideas for killing it but I'll let you figure it out.

Probably the most humane traps are the ones that lock them in a box when they go in to get the cheese or peanut butter. They are not 100% effective, but when they do work, at least you haven't killed anything.
The old fashioned traps are fairly humane in the point that the rat will die immediately as the device snaps shut. But then again they still die.
Probably the least humane trap is glue paper. The mouse remains alive and will struggle for hours to get loose. They will even try to naw off thier own legs. Horrible.
Poision is not a good option, although more humane than some traps, the mouse will not die immediately, and return to it's home in the wall. Nothing worse than the smell of death in you kitchen.
I say try the box traps first, and if that doesn't work for you use the old fashioned ones that snap shut.

A humane death trap??? Nope, dont think they exist. Thats like saying theres a humane abortion? They inject poison into the baby's heart, so he/she can die before the limbs are ripped off.
Yeah, I know, lots of thumbs down for me. What a tradgedy.

Depends what you mean by humane! The object is to kill the rat as quick as possible before it breeds. Humane for vermin ? The two don't go together. They are classed as vermin for good reason.

There are "live" traps like Havaheart, Most traps are humane - in that they are designed to kill quickly and cleanly.
The "snap" traps are inexpensive and work well - bait with peanut butter.

Yes - go to Wal-Mart or Home Depot to find these. They will allow you to catch the rodent and then release it outside. BEWARE - you should drive to an area about 2 miles from where you live - or other residential places are - and drop it there. If it's closer, it can come right back to your home or invade other's dwellings.

There are some sticky paper things that you lay out, they get stick to um then you throw it out. There was a rat at my parents cabin by the lake. The area had a rule about killing rodents or any other animals so we had to use other methods, there are also other things that just put them to sleep then you just toss um outside.
