I think the big question is what do you WANT to do for work? As a single mom in a minimum wage job you might qualify for a lot of scholarships so you can earn a degree and work doing what you've always wanted to do.
However, there are jobs that you can take with call centers - people place their order with you and you forward it on to the company. You might see if ProFlowers or other online floral companies are hiring.
There are also ads for people to do data entry and stuff envelopes from home. You can find those in the paper - just check carefully to make sure it's legit.
There's also a book called "The Best Home Businesses for the 1990's" and they have some ideas in there that might be helpful.

Honestly, look for a different job. Minimum wage is outrageously low, you can get any general labor job that will pay 2-3 more dollars an hour easily I'm sure. Ever considered selling some stuff you no longer need on Ebay?

First. Do you have a high school diploma? If not you need to finish your education. There are many programs out there especially for single parents to help them get their education.
Second. There are many jobs that pay more than minimum wage for people without education or specialized skills, you just have to be willing to do them. Even McDonalds pays more than minimum wage. Look for a job that will fulfill your immediate needs and then get an education that you can support yourself and your child(ren) with.

Babysit. Use the time you spend with your child to take care of someone else's child for a few hours at a time, ideally in your home.
Your child will have someone to interact with, which is great, and you'll have extra money coming from hours of the day that you can't do other types of jobs.
Just be aware of the laws regarding child care in your state, and make sure you have the required permits, insurance and other things. Also, don't take on more than one, and make sure it's only an occasional thing at first (someone dropping off their child for 2-4 hours once every week or two) until you're certain that you can handle it.

Going back to school is a good choice; such as taking on-line classes. If that's inconvenient; you can always search for another job that pays a little bit more than minimum wage, without a college degree.

If your in the UK, you could try something like being an avon representative where you deliver catalogues and get orders for the products and get commission. You could come up with you own business working from home on the side i.e making cards or home furnishings. Start up a baby sitting business or do some bar work or sell things on ebay.
