Robert Glasper and Aaron Goldberg are my favorite that I've seen live. Both are very creative.
There is a Lee Konitz album called Another Shade of Blue. Brad Maldeu plays a very creative piano on it. His solos are constantly morphing and changing as he plays. He is truly inspired on that album, and probably many others.

I know Jamie Cullum plays the piano, but he's too new for me to really like him yet.
