Because the human race is filled with cowards who prefer to operate in the comfort zone. It takes a lot of guts, courage, bravery and determination to strike out on an issue that 99% of the human race is comfortable with just because they are familiar with it. Humans operate within a comfort zone and do not want that disturbed. Therefore, anyone venturing out of the "box" will be viewed as controversial and eccentric.

An awful question. Here's why.

A thinker is a solitary who has overcome the influence of the multitude. A great thinker is a solitary who overcomes solitude and can commune with multitude. For our purposes here it is necessary only to describe two consequences.

The first is that the great thinker becomes accutely aware of the danger the multitude poses to the activity of thought.

The second is that the great thinker protects the activity of thought by measures only known to like kind. Just one example of this is "ad captum vulgi loqui".

At various times in human history, various societies have insisted upon absolute conformity from its individual members upon penalty of death. This is why great thinkers cloak themselves. Recognition of their controversial status and eccentricities would serve to single them out for persecution or execution. In more tolerant societies the risk is diminished only, it does not vanish. One need only notice those who are singled out by the crowd for their "intolerant thought."

As for the eccentric part, maybe they are to smart to follow a system they don't like. Examples, wearing the latest fashions, working a 9 to 5 job, or eating fast food. Etc. Etc.

People are most comfortable with ideas that are similar to theirs. They are also most comfortable with People who are similar to them. Any Idea that is different or "out of the norm" would make people uncomfortable and people would want to fight it, making it controversial.

Because they challenge themselves and others to "think outside the box", and that makes them different. Most people are afraid of different because security and comfort lies in the established norm- not in being different.

I do accept your premise, but I wonder why you even have to ask about this. People whose thoughts remained within conventional bounds would never produce innovations.
