The mechanic said that it is normal and that I need to wait about a week for carbon to build up, but it will never be as quiet as OEM. What do you think?

No, the car should be as quiet as before the repair.
Take it back and have the repair done correctly or get your money back.

Hey everyone! It turned out that I had a small hole in my exhaust pipe.. Louder when stepping on gas! In patched it with high temp epoxy with metal that cost me 12 bucks. That worked for about 9 months. Gonna do it again until I can get it welded. And to think some mechanic tried to convince me to replaced entire exhaust pipe system for 300. Ummm nope I'm no dummy.

no it is not normal. what he install to your car is a high flow catalytic converter which cause more exhaust flow than the original converter. this will create loud sound. to make it sound like the original, you need to replace the converter with the same one
