Let us see, he would have to help with the mopping up of the Empirial Forces. He would probably have to attend Han and Leia's wedding. Then he should go to the Jedi temple hopefully to reopen it's library and find a woman to have some children. I imagine people will want to treat him like a sheriff so he is likely to need other force sensative people to join the order. That means he has to teach those who want to learn. Eventually someone is going to ask who were the Sith and that will lead into a discussion of the mistakes of the past. And then the Droids will unite and rebel against the humans led by R2. C3P0 will do what he can to mediate but the lines will be drawn between machine and man over years of discrimination. The new Jedis will be tested against an enemy with no emotion and no mind tio influence. Luke will have to pull an Obi Won to teach the Jedi that the force is in everything. He will begin to influence the droids. People with mechanical implants will have them removed. But in time Luke will mediate both sides into trusting one another and no longer fearing one another. that should be when the ddark side breaks away and saga continues a new.

Read the books! He goes on to start a Jedi Academy, he gets married, has a kid.....
Seriously, the books pick up right where Episode 6 left off. I'd find a chronological list and start plowing through them. There's at LEAST 30, and probably closer to 50-60 books in the series by now.

I don't know, but I heard that they are making the next 3 movies - for a total of 9 in all.

After the academy, he retired with a Bantha princess and opened a multiboobie bar in Mos Eisley, where his old buddy Han Solo liked to hang out whenever his old lady Leia tossed him out.
