I am a single mum and will soon be moving either back to the UK or to Holland, but I've yet to decide where. Does anyone know what it's like being a single mum in Amsterdam? Are there any State Schools which teach mainly in English??

There are more single mothers in Amsterdam. It is not easy, but that's nowhere. I imagine it's easier in Amsterdam than in the UK. There are many, there is no stigma I think.
The normal schools teach in Dutch, but children will pick that up soon.
There are international schools that teach in English, but they are no state schools and expensive 5000 euros a year at least. (see isa.nl or others) the costs you can find on the websites. Esprit could be a choice.

To move to Holland you need a job.

I know a single mum in Amsterdam, with the job and the kids it is hard.

The official language in Holland is Dutch. From 11 or 12 years of age kids get English as a 2nd or 3rd language.
