if you take on a job , any job , office supermarket

you have to sign a contract to say stay with the company for lets say 3 years, and you wont to leave but you can't because you've signed a contract, and do all jobs have contracts ?

In all jobs you have to sign a contract. But it does NOT say you have to stay a certain length of time except in the bit about Resignation/Notice Required - both sides must give the other side a MINIMUM of 4 weeks notice of leaving.

All contracts will normally have a clause that talks about "mutual consent" to terminate. So if both parties want to terminate then it can be done. If it is an "unfair" contract and contains unreasonable stipulations and terms then you can get out of it anyway.
It is very rare indeed that if if one party to such a contract wants out that the other party wouldn't let them go.

Most jobs have contracts of employment ( at least with reputable companies)
Most lower paid jobs would have a week or two notice period.
Management jobs may have between 1 and 6 months (usually 3-6) Senior Management jobs would maybe have 6 months to a year or even longer.

Regardless of contract length, however, there is always a way out.

Take your contract to the Citizens advice bureau (CAB) and they will give you a good starting point and will let you know whether they think you should get a solicitor or not. It will cost nothing for advice form CAB

Not all jobs have contracts.

A contract is an investment.
You agree to do something.
Say you were to bid on cleaning a house.
A lot of people bid as well.
You bid the lowest amount of money and are expected to do the job. You have made a contractual obligation to clean the house.
If you only bid $10.00 and the job costs $15.00, you are expected to either pay the $5.00 out of pocket, or you must declare bankruptcy.

NASA puts out contracts to build certain items on the Space Shuttle. The people with the lowest bid win.

Howard Stern is a great example of a contract.
They are expected to behave and act in a certain way.
Often these rules are not clearly defined and Howard Stern figured out a way to stay within the rules, while maintaining his reputation. See the movie Private Parts for more details.

The simple answer is NO, all jobs do not have a contract.

If you want to leave, then LEAVE for Christ's sake. Don't stay in a job that your not happy in as it will make you unhappy inside.

Unless you are in a position that is hard to replace (ie. VERY SKILLED) then normally they will not hold you to the contract.
