The way I do it is I spray deoderant all over my hand and light it. It takes a few seconds for the flames to burn up all the deoderant before it starts burning your hand! :-)

10 seconds is a long time.
Test your method on some raw meat first, if it turns even a little brown, you probably shouldn't do it. Or maybe use a raw chicken drumstick with skin, see how it goes.
