Hello, you can visit booking.com for a list of hotels at the cities you're interested.
Give attention on guests reviews and comments. Many times the prices are really a bargain (pending also on the period you want to stay). I've used booking.com the last three years and I'm completely satisfied. Friendly to browse, easy and secure to book on-line. Have a great time wherever you decide to travel. All the cities you've mentioned are so beautiful (but Venice is so romantic...)

There are many good websites like the one's listed above, but here's my stategy for seeking out the best deal.
Try some of the above sites and others such as Expedia and Travelocity. Take some notes, then go to cheaperthanhotels which hasa tool to sort the cheapest in each star rating category and then see what free extras the hotels are offering by digging behind the prices.
Many include free extras to get you at the "Last Minute" which can save you lot's of money:

For Amsterdam and Paris go see for Formule 1 or Ibis Hotels.
cannot tell you for sure but i guess you'll find them in Italy too
and they are a vy good affair, not expensive at all, and Vy vy clean and comfy
