Because of the new NFL television contract, the network which airs the Super Bowl will air the Pro Bowl; the 2007 game is held on the Saturday after Super Bowl XLI because of the 2007 Grammy Awards. The 2008 game, on Fox, will revert to Sunday, because Fox has the Budweiser Shootout on the Saturday after Super Bowl XLII.

Maybe the NFL was hoping that more people would be watching saturday afternoon TV than sunday afternoon TV. Or, maybe the NFL just wanted to get this joke of a game over with as fast as they can.
What's more boring than watching several of the most talented and wealthy NFL-ers play schoolyard football. We all know they don't want to be playing. They're happy that they got to spend the week in Hawaii, but it sucks for them that they have to risk injury for another 60 mins. They'd rather play their best WHEN IT COUNTS!
That being said, maybe it's time the NFL have the Pro Bowl in the middle of the season. It's a time when every team would have a chance to enjoy a break and every player would be in playing shape instead of looking a roasted pig or two heavier.

Due to the Grammy Awards on Sunday, they wanted to broadcast the Pro bowl on Saturday. They do not want to overlap Football and the Grammy's on the same day.
