I'm referring to it as color, as I am American, so no confusion there for you.
Anyways, color is the physical appearance of an object that your eye picks up that is caused by differing qualities of the light reflected or given off from them. There are different hues, lightness, and brightness. Color can be described in dominant wavelength, luminance and purity. Hope this helps answer your question.

"Color (or colour, see spelling differences) is the visual perceptual property corresponding in humans to the categories called red, yellow, white, etc. Color derives from the spectrum of light (distribution of light energy versus wavelength) interacting in the eye with the spectral sensitivities of the light receptors."

hmm... I'm not sure how you would say that to kindergarteners. Maybe like, "it's the way things look" and then give color examples.

Colour (or Color) is the reflection of light (I mean reflection of non, one, a few or all wave lengths of light). But I have no clue how you are going to explain this to 5 year-olds!

Color is light at various wave lengths. Your eye can only see a small portion of all the wave lengths of light. White is a combination of all light wave lengths (or all colors).

Use a prism to sow how light can be divided into various wave lengths.
