There are some nice towns like Ålesund, Trondheim or perhaps Lillehammer, which are pretty in themselves and where you don't have to go far at all to get to open spaces. Actually, that could be said about most Norwegian towns, perhaps with the exception of the very two towns you've been to. In the north, I've been told by family members that Tromsø is a nice place - and going in summer, that would also give you a chance to experience the midnight sun.
If you are looking for completely open land or just a very small town, you could try finding a mountain hotel on the Hardangervidda, f.ex. near Haukeli(grend) or Geilo or further north near Hemsedal / Beitostølen.
You could also look at Geiranger or Balestrand / Lærdal / Aurland. These last four places are all by deep fjords and with rather high mountains around them, so I guess it depends on your definition of open land.
Besides staying in a hotel, you might consider renting a cabin if you want to stay in the same place for a week or more. It's often relatively cheaper and you have lots of space, plus a very good selection of cabins to choose from if you're in good time for booking. But I think it would require renting a car if you're not bringing your own.
In my family, we've used Novasol some times and been quite satisfied.
You could try looking at some of these websites:

Hope you have a wonderful vacation in Norway, one of my own favorite countries for a holiday :-)

West Norway is wide-spread from it is amazingly alluring nature and mountains. course journeys are general and perfect thanks to work out Norway is once you employ a vehicle and force round for 2 weeks. I advise cities like Bergen, Ålesund, Åndalsnes, Tromssa. more beneficial north you pass you'll attain tundra, so there is no forests.
