They may be molting as you suspect. They may also need moisture, and that's why they've dug into the hermit soil - it's moist from when you expanded it. Hermits need regular "baths", and may not have been getting them regularly where you bought them.
The immediate thing that I see missing from your list is a dish for saltwater - purple pincher hermits are marine and need salt as well as fresh water. "Extra" shells should have an opening just a little larger than the largest crab's current shell. If they're fairly close in size, when one move "up" each will move into the next bigger shell. BTW, they prefer natural shells, not the painted ones! And although your hermits are probably small now, they'll like a bigger tank as they grow - a 20 gallon long is the smallest I'd keep a group in.

Nothins's wrong with your crabs. Their called hermit crabs for a reason, they like to hide. For shells, get one the size of its former shell, and one slightly bigger to fit into.
