Because Sabu does that before he makes his superstar move like his top rope moonsault or his facebuster. Do you know that Sabu was trained by the orginal Iron Shiek. He is a very crazy wrestler. He has broke many bones. I rember this one match against Terry Funk, Sabu tore open his bicep after the match it took over 100 stitches. He has also used super glue for alot of his gash's if you ever notice all his scars that's why. Sorry if this is to much info

Its part of his Muslim gimmick. The pointing to heaven signifies his reverence to Allah. Often times this is followed by a bow to Mecca.
This was something his uncle (both in real life and in keyfabe) the Sheik did. After the Sheik's death, Sabu's gesture also became a tribute to his uncle.
