the grass is always greener on the other side. It just is. If you don't have something you want it. Here's a case in point: my bed at uni is uncomfy, and so I long for my bed at home which is far sexier and more comfortable ;p. But when I'm at home, I miss my friends, so I want to be back at uni... the grass is greener!

Things are more desirable when they are out of reach because you don't have them. Once you get it, it is not as important because you already have what you wanted.

because when things are out of reach, you're generally bored and have time to dwell on them. when things are within reach, you understand that there's more options.
