Because it's easy to wire a light bulb in a frig using the electricity that is already feeding the frig, but for lighting in cabnits and pantries, you would have to run all new wiring and find an electrical reed to feed the lights! Not exactly something the average person can do! BTW, the same applies for all appliances!

You don't really need a light bulb to see inside your refrigerator. But it is a nice feature and makes it easier to see. And since the refrigerator an electrical appliance, the power is already there and it's pretty easy for the manufacturer to simply add the light fixture. Food cabinets don't usually have existing wiring, and lights would be a custom addition that most people wouldn't choose to pay for.

It's easier to install a light into something that gets plugged in. A fridge has gets plugged into the electrical socket so it can power a light.
If there were to be lights inside our pantry and food cabinets they would need to be attached to an electric outlet or wire electricity through them.
You probably weren't looking for an actual answer to that question but there it is anyway! =)
