Wrap it in foil and don't keep your refrigerator extra cold.

I have had amazing luck by wrapping it in aluminum foil. Just take it out of that plastic and wrap it firmly in the foil--you don't need to crimp the edges together or anything. This allows the perfect amount of air circulation while keeping away light and prevents loss of moisture. I never would of believed it if I hadn't tried it on the advice of a magazine that is very scientific in it's recommendations--they always test things thoroughly.

Put it inside of tightly-sealed plastic (such as tupperware) to keep it from dehydrating. If you put in a damp paper towel with the celery, that will also help to keep the humidity high enough to keep any dehyradtion from happening and keep the celery crisp.

If you put celery in water it will absorb water and become rigid. You may need to cut the stem end to open the xylem(water tubes) If you put food coloring in the water you can get colored celery.

set it in a glass or pitcher of water, celery is over 90% water and it loses water through dehydration in the fridge and becomes "floppy."

Try coating it in olive oil - this keeps lettuce leaves fresh for about a week, so it might work on celery too.
