Hey, NYC is great, there is a whole lot of diversity and acceptance there. It must be hard to let him go though, have you ever considered going with him? Its a really nice city. You could tell him to at least wait until he has arrangements set up there, or maybe go check the city out for a few days before tottally making up his mind, You know? then maybe he will see its not for him and he doesn't like it.

Sounds like he just needs to get away.
Advise him not to do anything as rash as selling the house -- yet. Perhaps take a sabbatical or a long vacation from work instead of quitting. If he decides he doesn't like it in NYC he can come back to something -- including, we hope, you.
But that's about all you can do is advise.
Don't try to tie him down to FL, whether he leaves or not he may hold it against ya.

You should hit him over the head! He has two, take your pick. The man owns a home and has a stable job in Florida, and nothing in NYC. Explain to him what's going on, and ask him to stay.
