I've completed by LSAT and gotten all my info together but now it's February and I've missed a few scholarship deadlines at schools I want to apply to. Should I just wait until next year? And, if I do, does it look bad that I had to take an extra year to get my stuff together?

If you don't waste that year sitting on your butt, then no, it doesn't look bad. Next year, it'll just look like you got started REALLY early. For some applications or scholarships, you have to take the Feb LSAT of the previous year to have enough time to apply to those things.
