I wake up occasionally with a slight headache and puffiness in the my eyes. I weigh more than usual and can tell my body is retaining fluid. It is not period related. Could it be something I eat the night before?

Eating food that has too much salt in it can cause it. Excess salt cause the body to retain water. Ice or hot tea can help, it rids the body of excess water. I retain water alot so I drink tea to keep it in check. My system can't handle food with a large sodium (salt)content. I read the labels if possible. Excess salt is bad for you.

Salt is a big culprit, read labels on the food you eat. A Doctor can give you some pills to help reduce the water retention.
