In WoW, you can be a female night elf priest, e.g. Priestess. You can get a mount that is a white Tiger.

You get the same spell list as all Priests to select from, but some of them are similar to the Priestess of the Moon Spells.

I think the closest thing to a demon hunter for Night elves is the Warrior. There is also a Hunter class, but it specializes in range weapons not close-in fighting.
