Gene Wilder - he was sweet and the chocolate factory was magical.
But don't blame Johnny Depp - it was Tim Burton that made the remake so creepy. If you see Depp in Finding Neverland you will realize he could have made a nice remake of the Chocolate Factory if the director was looking for that angle on it.

Although usually I'm a big fan of Johnny Depp's characters I have to go with Gene Wilder on this one. Plus the oompa loompa in the new version was lame.
