The 3 most important factors for success in restaurants are location, location, and location. Don't take over the location of a previously failed restaurant. Another key factor is diner turnover, the more diners the more revenue. You can charge lower fares if your diners eat and get out. Conversely, diners are willing to pay more for the chance to relax and soak in the ambience and share special moments. Courtesy and chivalry are important in the business. If you can, have someone open the door for the guests. Help the ladies be seated. Don't rush your clientelle. Serve a rounded menu, but keep it fairly simple. Draw up a business plan; how you're going to operate, what your niche is, your advertising plans, don't forget the budget it will keep you grounded and let you know how you are doing. Line up your services food, accounting, linen, supplies, etc.

Before you open a restaurant, please rethink your entire idea.
If it's not in the best location, well, you've got a lot of barriers to overcome. Restaurant businesses, in my opinion, are not the things to get into these days. Too many of them and the obesity crisis does NOT help out, whatsoever. Get into organic foods, instead.
