There are so many good ones, it is hard to narrow it down to just one. I would break it down by genre:
Comedy: The Errand Boy, with Jerry Lewis
Drama: The Godfather, Part II
Sci Fi: 2001: A Space Odyssey
Action: The Terminator
Fantasy: The Wizard of Oz
Horror: The Shining

There are so many good movies out there from back in the day. But I love the movie called "Life as a house." I think it is a great movie that encourages one to believe that change is possible in all of us. I was a facilitator at a womens prison and it was a movie that I used in one of my classes as movie therapy. It is touching and I personally love it alot.

I think Ben-Hur, Spartacus, Ten Commandments and Gone with the Wind are pretty amazing. Most all of Frank Capra films too...but I seriously love Pulp Fiction!
Open Range had great cinematography as well.

I liked The Ten Commandments, because it was so well done
in its day. I actually got to shake hands with Charlton Heston
at a book signing one time. He is like a god.
