You'll probably go to the restroom a lot - carrots have a lot of fibre. In order for you to turn orange (and it does happen!) you'd have to eat them for a lot longer than a week. It probably won't have that big of an impact on your eyesight.
But hey! You'd be cleaning out your digestive tract. That's a good thing.....
