If a company is paying under the table, it is not paying the legally required federal taxes. That's a felony. I don't recommend it.

You get hit with penalties and fines for not paying the applicable employment taxes.

If they are discovered they will be fined heavily, be made to pay all back taxes not withheld and if it is a major problem may even be forced to shutter their doors.
