Sometimes its Hydrology - but I'd argue to study water itself requires chemisty or physics - its not something you can learn about independently of other things. If you learn about a molecule of water and the forces of intramolecular bonding you're learning about all molecules. Go deeper in to that and its not chemistry anymore but quantum physics. What about water in art? I don't think there is a word to describe the study of water in and of itself just as there isn't for carbon dioxide or dimethyl mercury.

If you want a book that looks at water from all points of view you can't do better than Philip Ball's 'H2O: A Biography of Water'
