Red has always been symbolic of blood.

However, in many Middle-eastern civilisations it was the symbolic representation of fire and associated with power and importance - a colour which stood out.

The bright red was also the colour of royality, and restricted to people of wealth. this is beacause the red dye produced by the madder root dye was not colourfast and these deep red clothes were worn by the lower classes. In Western cultures Red is thus the colour of fire and blood, so it is associated with energy, war, danger, strength, power, determination as well as passion, desire, and love. Signs are red because the colour red on the visible spectrum is at the top end therefore it reaches the eye first and makes you realise there is a danger or probelm.

I was told it was red for the spilling of blood same as why the British used red for their uniforms so that it would not show the colour of blood.

I reckon it is because our blood is red - and if we bleed we are potentially in danger - hence the colour red signifies danger!

The choice of one color over another is totally arbitrary.Also, originally red signified hot because fire got red as in red hot. So keeping with what had already been established the rest was just fundamental.
