I think it's a bit long personally, but it's not my decision to make. Name your child what you like. It sounds nice though. I would spell it Katie Elisabeth May Jones personally. Or Elsabeth.
Or you can try Katie May Elisabeth Jones.

Oh don't worry about "Old Fashioned"!! My son is named "Arthur"! I know babies called Stanley, Henry, George, Jack, Harry, Ruby, Lily, Phoebe . . .!!! Older names are lovely!
And as for "long", I LOVE two middle names! everyone should have two middle names. My Other Half and I both have two middle names and so does our son - he's "Arthur David William".
I would much sooner an older sounding name than some silly -made up modern "trendy" concoction that will date horribly within a few years!!!
I love the names you've chose, but it might sound better if they were rearranged a bit - Katy May is lovely - it really goes together. So perhaps Katy May Elizabeth Jones? Or even Elizabeth Katy May Jones?? You could call her Lizzie-May for short! Thats so sweet!
On the other hand you could do what my mum did with me - my name is Kate but my mum gave me the full name of Katherine and I've always been called Kate/Katy for short. So you could call her Katherine May Elizabeth Jones perhaps? Or Elizabeth Katherine May Jones?
Either way its very pretty. Ignore people who say its "old fashioned" - their kids probably have horrid chavvy names!!

I think thats a lovely name. It has a lovely ring to it. As for it being old-fashioned, i don't think so. The "old-fashioned" names are fashionable again.

no old fashioned and english is best, that's what mines like :D cos i think old fashioned is really stylish in its own way! although i thik katy may elizabeth or may elizabeth!!! good luck!
