www.surlalunefairytales.com is an excellent site for fairy tale information. I think you can also questions there. Jack and the Beanstalk is the only one that comes to mind right now, but I am sure there are others.
The Disney movie Home on the Range featured cows prominently.
The picture book Click, Clack, Moo that came out a few years ago is hilarious, and features cows that type. There is another pb by David Milgrim called Cows Can't Fly that is cute, too.

There are several cows from these collections of stories, but also polar bears and any other animals you care to add.
Most little nursery rhymes are political satire in disguise. The very early form of politcal cartoon. Humpty Dumpty, Ring A ring of Rosies, London Bridge, and Little Boy Blue...

I'm reading a great book called Angela Carter's (edited) Book of Fairy Tales. Some of the stories with cows in are 'Beauty and Pock Face' (Chinese) and Tatterhood (norwegian), Diirawic and her incestuous brother' (Sudanese), 'The little old woman with five cows' (Yakut). 'The good girl and the ornery girl' (Nort American). It's a good collection - i recommend it!
