Long ago people started contemplating nature. They ended figuring about the rotation of the Earth, the stars, planets, etc. The Incas even developed a sophisticated calendar just by contemplating through hundreds of years. Their calendar ends in 2012...
To know from which direction the sun and moon appear, all you need is one day and some good will. You might not even need a compas. Either that or a better atlas. The rest is contemplation of events...
By the way, the sun comes up from Japan. Japan is the land of the rising sun. Ive never been in Japan, but I guess I could find it following the rising of the sun...

The Earth rotates counterclockwise. This makes the Sun appear to rise close to the East and set close to the West. The Moon orbits the Earth and appears to rise in the East and set in the West.

Earth moves from west to east and sun from east to west. Due to earth's rotation over it's axis and revolution around the sun one side is in light and the other side is in total darkness at the same time. The moon is always present in the sky. Being an artificial satellite,At night, as it does not have it's own light, takes the light from the sun. so, we can see it.

the sun is stationary and the rotates on its axis and revolves around the sun
when it is day the earth is facing the sun and night facing away from it
