I would tell them that you are looking to grow and develop. Also, that you are looking for a company that is looking to grow and develop also. If in any way you can help the company you would do it.
Answer questions truthfully and look the interviewer in the eyes when you are talking to them. Let them know you are truthful and trustworthy. Appear calm even if you are not.

I would tell them that the job simply isn't challenging enough and I am looking to advance in (your chosen career path). I really don't think that there is such a thing as the best answer but something along these lines usually works. Good luck with the interview.

Well i would think that the job was getting too complicated. Or maybe there were not enough workers to all help get the work done and the person who quits because of it quit because they were under HUGE pressure trying to get everything done.
