Consider such criteria such as content (how good the story is), graphics, timelessness (can you watch it over and over and over again?) and its far-reaching influence into our culture. Take your pick :-)

Oh, wow, this is a fun question.
I watch Final Fantasy VII: Advent Children ALOT. It has alot of references to world culture, I think.
I really enjoyed Princess Mononoke. I'm Native American and I appreciate its commentary on the displacement of animals.
Cowboy Bebop is an excellent series. Great soundtrack, great animation and excellent character development. Plenty of bang for the buck.
Gantz really kept me guessing. Though it IS an EXTREMELY violent and sexual series...good stylization of the characters.
Ghost Stories: Freshman Year is a really good release in the English version. Originally it's quite a bit like a super-cheesy Scooby-Doo, but the American scripts are witty, irreverent and hilarious. Better than South Park and almost as good as the Family Guy.
Addendum #1: Naruto is not my cup of tea. And I've seen plenty of good anime... I just really don't like it...I don't think it's a good example of anime at all.

My picks (in no particular order)...

1) Akira
2) Ninja Scroll
3) Neon Genesis Evangelion
4) Vampire Hunter D
5) Fist of the North Star

There are a few more that I really like, but those are the five that I think anyone who calls themselves an anime fan should see. Pure classics.

Naruto (it has the most expressions explored i feel and despite the fillers, the main plot is still pretty good. if u'r having a bad dae, i tink naruto nicely helps to lift ur mood)

Slamdunk (well, simply because it's so inspiring and Sakuragi "i'm a genius" psychology is cute. A definite timeless anime for its humour and inspiration)

Deathnote (i havent watched the anime but i presume it shud be pretty much the same as the manga that i've read. Brilliant plot. explores into controversial issues about good and bad. a battle of minds. superb. )

Mai Hime (it's one of the most feminist animes i've watched. kinda reflects on the struggles females gonna go through. sacrificing love and stuff like that. pretty heart renching but mikoto tops it of with a sprinkle of cuteness =)

well, so far i can only think of these 4 that are more memorable =) if there's a 5th, that's probably be Bleach.

I LIKE POKEMON, DIGIMON, INU YASHA, ESCAFLOWNE, FUSHIGI YUUIGI, ALICE ACADEMY, CARDCAPTORS, CHRONICLES OF WINGS,SAMURAI X, GET BACKERS ETC.

FULLMETAL ALCHEMIST being my favourite as it had a different story, totally exciting, twisting and really scary at some point of time. Animation was awesome. I feel these animes are not so famous though they should be and the indians should learn the art of animation from japanese. And not to forget it's a really cool question!!
