Many people believe that Valentine day is a commericialized holiday, invented by companies, possibly "greeting cards" companies to help gain alot of profit. By bumping the prices of everything up by like double the normal price. It also seems as though Valentines Day is a holiday to help reel customers in, after the Christmas season. This is a very relevant belief, because it is an obvious truth that prices of flowers..chocolate do goes up a significant amounts. Including the restaurants.
But research is has also proventhat Valentine's Day started more than 1,500 years ago
In accordance to research the word "Valentine" refers to "Saint Valentine" who died 1,700 years ago (a long time, I know) So basically back then, the Roman emperor Claudius, realized that young men didnt want to join his army because they didn't want to leave there wives, or family. He forbid marriages, b ut Saint Valentine continued performing marriages for the lovers, in secret. St. Valentine was then sentenced to death.
Valentine was allegedly known for curing a a jailer's daughter from blindness. On the night before his execution, he had sent her a little note that was signed "from your valentine". Evidence showed that he reportedly died on Feb 14, 269 A.D
It wasnt until 496 A.D, February 14 that Pope Gelasisus honored St. Valentine.
Interesting aint it? Who would of known, that Valentines day is about a execution of a saint.

Esther Howland was credited for sending the first Valentine in the United States
The United States Postal Service is creidited for advancing the popularity of sending Valentines when the penny postcard came out in the mid 1800s, sending mail was too expensive before that, and when the penny postcards were introduced, it became very popular.
The concept of Valentines Day, had changed alot overtime obviously, but that is looking back at the very beginning.

Pasta with Chicken & Mushrooms Coarse salt and cracked pepper ¾ lb. bowtie pasta 1 lb. chicken tenders, tendons removed, halved lengthwise and again crosswise 2 Tbsp. butter 1 lb. small white button mushrooms, halved, stems trimmed ½ dry white wine ½ cup heavy cream ½ cup chopped fresh parsley Boil pasta in salted water according to package directions. Drain, reserving ½ cup pasta water. Return pasta to pot. Meanwhile, season chicken liberally w/ salt and pepper. In a skillet, melt butter over medium heat. Add chicken, turning once, about 5 min. on each side, until cooked through. Transfer to a plate. Add mushrooms to pan, season w/ salt and pepper. Cover, cook over medium heat until mushrooms release their liquid, about 5 minutes. Uncover, cook stirring until liquid has evaporated, 3-5 minutes more. Add wine, cook until evaporated, about 2-3 minutes. Reduce to low, add cream and chicken stock, stirring to coat. Transfer to pot w/ pasta; add parsley and pasta water, as necessary. Toss to combine; season again to taste with salt and pepper. Serve immediately. --Everyday FOOD ---------------------------- Bibb Salad with Basil Green Goddess Dressing 1 cup good mayonnaise 1 cup chopped scallions, white and green parts (6 to 7 scallions) 1 cup chopped fresh basil leaves 1/4 cup freshly squeezed lemon juice (2 lemons) 2 teaspoons chopped garlic (2 cloves) 2 teaspoons anchovy paste 2 teaspoons kosher salt 1 teaspoon freshly ground black pepper 1 cup sour cream 3 heads Bibb lettuce 2 to 3 tomatoes Place the mayonnaise, scallions, basil, lemon juice, garlic, anchovy paste, salt and pepper in a blender and blend until smooth. Add the sour cream and process just until blended. (If not using immediately, refrigerate the dressing until ready to serve.) Cut each head of lettuce into quarters, remove some of the cores, and arrange on 6 salad plates. Cut the tomatoes into wedges and add to the plates. Pour on the dressing and serve. --Ina Garten --------------------------- Garlic Bread ------------------------- MOLTEN CHOCOLATE LAVA CAKES ½ C. butter, unsalted 4 oz. bittersweet chocolate 2 eggs 2 egg yolks ¼ C. sugar 2 Tbsp. all-purpose flour Butter and flour custard cups or specialty molds. Preheat oven to 450ºF. Melt the butter and chocolate, but do not let it boil. Remove from heat and set aside. Beat together the 2 eggs plus 2 yolks and the sugar, until it's light and thick... about 5 minutes. Pour the now tepid chocolate mixture into the egg mixture, and beat to mix. Quickly beat in the flour until just mixed in. Pour into the custard cups. (At this point you can refrigerate for up to 24 hours. If you refrigerate, let return to room temp before you bake.) Put custard cups on a baking sheet and bake at 450ºF for 6-7 minutes. The outside will be set up, but the top may still be slightly wiggly. Invert on plate, let sit for 10 seconds or so, remove custard cup. Sprinkle with powdered sugar, and surround with a raspberry sauce or add a scoop of ice cream or real whipped cream on the side -- your choice.
