Destruction, travel, mystery, the unknown, the extremely primal (sharks, sea monsters, etc.), the origin of life, a metaphor for life, a symbol for a way to make a living (fishing), and perhaps as a source of medicines - for the body and for the soul - sometimes its quite refreshing just to watch the waves come in.

The Rhyme of The Ancient Mariner comes to mind; this is a story of sandness and longing and someone dealing with getting rid of a difficulty (the symbol is an albatross around the neck).
The Old Man and The Sea is another sad one, again of loneliness.
Moby Dick is more of a sad adventure. Wow, seems like common literary themes and the sea deal with people who look for answers or calm to be at peace with themselves ... but never quite get what they long for.
Similarly, sea voyages of self-search extend to 'adventurous' characters, from Robinson Crusoe to Kontiki onward.
People seek excitement or fulfillment; peace or a sense of what's missing in the grand world - then they look for it at sea, whether as a place of wisdom or a sign of hope!
